Ingredients
1 cup
white rice
2 cups
water
1 tbsp
package (one or another):
14 cup
mayonnaise
14 cup
plain 2% Greek yogurt
2
green onions
1
English cucumber
2 cups
cherry tomatoes

Toppings (optional): Better Than Bacon Topper, toasted pumpkin seeds, hardboiled eggs, lemon zest, lemon wedges

Preparation
  1. In Multipurpose Steamer, combine rice and water. Top with tray; microwave uncovered on high 16–18 min, or until tender. 
  2. Meanwhile, in a large bowl, whisk dressing mix with mayonnaise and yogurt. Set aside.  
  3. Chop green onions and cucumbers. Slice cherry tomatoes in half.  
  4. Add rice and veggies to bowl with dressing; toss to combine. Add toppings, if desired.
